Avocado Spread & Alfalfa Sprouts Grilled Cheese

Inspiration for my grilled cheese creations can come from the strangest places. This week was no exception. At Jimmy John’s, a sub place I am known to frequent, they have a vegetarian sub that I love. (#6 for those that have been to Jimmy John’s. I order

Recently, I had taken a break from grilled cheese sandwiches as culinary classes were winding down for the semester and I wanted to focus on my studies. I had a final practicum consisting of knife skills and recipe, as well as a country presentation. Oh

Ultimate Adult Grilled Cheese Sandwich Contest Winner

Ultimate Adult Grilled Cheese Sandwich Contest Winner

The last time I ran a contest, I only had two submissions. They were great submissions but only two, leading me to be somewhat disappointed. When Sargento contacted me regarding a new contest, I was somewhat worried that, again, I would only receive a couple recipes, leading to more disappointment.

Boy was I wrong. 8 submissions later, and we had ourselves a real, true, Ultimate Adult Grilled Cheese Sandwich Contest. I was supposed to notify the winner by May 2, but not only because of life, but because of the awesome amount of submissions, I needed more time to choose. Come late Saturday, May 7, 2011, I let the winner know and thanked everyone else for their entries. Everyone should be very happy with their recipes. They ALL were fantastic and I wish I could have given everyone some sort of prize, but unfortunately, Sargento has only provided enough prizes for one winner.

So, without further ado, lets all congrats Donna Ryan for her wonderful Tex-Mex Grilled Cheese with Creamy Avocado Lime Dipping Sauce Grilled Cheese. The Creamy Avocado Lime Dipping Sauce just hit me in the right way, making my mouth water. I am hoping to make said grilled cheese sometime in the near future (and will of course blog about it).

  • 4 thick slices Boule bread
  • 3 tablespoons butter
  • 4 slices Sargento® Natural Blends™ Deli Style Sliced Colby-Pepper Jack Cheese
  • 4 thin slices Red Onion
  • 4 slices Tomato
  • 2 /3 cup Sargento® Artisan Blends® Shredded Authentic Mexican Cheese

Process:

  1. Lay 2 slices of Boule bread on cutting board. Lightly butter using a butter knife or small spatula..
  2. Place 2 slices of the Colby –Pepper Jack on the bread slices.
  3. Add the onion and the tomato and top each with 1/3 cup the shredded Mexican cheese. Push down with spatula to get the cheese to cling together.
  4. Lightly butter the top slices of bread and top the sandwich. Butter the outside of the sandwich .To grill either heat a heavy cast iron skillet on medium low and melt 1 tablespoon butter. Add sandwich and cook 3-4 minutes per side until golden brown and melty. Or you can use a Panini grill or stove top grille, preheat and cook until golden and melty.
  5. To serve slice grilled cheese in half on the diagonal and place on a plate with a small bowl of the creamy avocado lime dipping sauce.

This is the ultimate – !

When I originally started this grilled cheese project, I never imagined that I would be doing it for 3 years plus, nor did I think that I would create special grilled cheeses for Passover. However, that is exactly what has happened. Originally, I created a Matzoh

Three Year Aged Gouda Grilled Cheese

Three Year Aged Gouda Grilled Cheese

I was not planning on cooking a grilled cheese this week as I have a big quiz on Wednesday and needed to study. However, on Saturday at Whole Foods, I noticed that they had a three year aged Gouda on sale for $9.99 lb, originally $16.99 ea. I couldn’t resist. I haven’t used Gouda much, so I thought, “Why not, I can study later?” Continue reading Three Year Aged Gouda Grilled Cheese

The Grilled Cheese Kitchen and laundry room were having issues over the weekend, with multiple sinks backing up. Since we weren’t sure when the problem would be fixed, the original plan was to not do a grilled cheese sandwich. Then, sometime Monday, Mr. Plumber came

a look back…

a look back…

On January 4, 2009, I started blogging about grilled cheese sandwiches and began my fascination with this amazing sandwich. It has been 70 sandwiches and counting, with no plans to slow down. It all began with wanting to improve my cooking skills and to create a list of many very, very good grilled cheese sandwiches for future reference. SInce then, it has turned into so much more and has even permeated into my “real life.” No longer am I working at a desk as a webmaster, but now I am working full-time in the restaurant business and taking culinary classes. It has been almost one year since I traveled to the The 1st 8th Annual Grilled Cheese Invitational and engrossed myself in the grilled cheese culture, learning as much about myself as the grilled cheese. I am on Twitter and Facebook, quickly becoming known as GrilledShane (thanks to Kyle) and “that grilled cheese guy.”  I have gone all in and am slowly making progress. This look back is to celebrate the grilled cheese sandwich and my progress. This seems like as good a time as any. Let’s take a look back at all 70 sandwiches I have created, and please add any and all thoughts in the comments.

When I originally planned to write this blog entry, I had the idea of copying and pasting information from past blog entries, and maybe adding an additional thought. Not much else. It was a good idea but, in my opinion, somewhat boring. That is when a light bulb appeared over my head and I devised what I think is a great idea. Why not create a downloadable PDF that looks back?

It took some time to figure out how to create a multi-page PDF with the tools that I have, but when I finally did, I was on my way. There may be a small problem with zooming and “Actual Size,” but overall, I think everything came out really well. The file is 7 MB so it may take a second, but I believe it to be well worth the wait.

Download A Look Back Now!

Once you have downloaded a look back, and looked through it, please let me know what you think. I would love to hear your comments. Here is to many, many more grilled cheese sandwiches!
