Last Sunday, even though it was raining, I headed to our local farmer’s market to pick up a few things. I purchased some Ohio City Pasta for my father, an Apple Pie from Gray House Pies (yum!) for myself and lastly, a package of Toasted Pumpkin Chevre from Mackenzie Creamery. The previous week, I had seen a different cheese, a tomato kind, that was delicious. However, this week they did not have the tomato chevre and instead had the Toasted Pumpkin, which they were sampling with graham crackers.

It was at a time when Mackenzie was beginning to gain some respect and rewards. When I first stumbled on this recipe, my mouth just about hit the floor. Not only do the photos make me drool, they are phenomenal, the actual recipe itself is ingenious. It puts a very unique spin on the typical grilled cheese sandwich and tomato soup concept. I am not sure I would actually be able to recreate this sandwich as well as the author, but it is definitely worth a shot…wouldn’t you agree?

Laura Werlin is one of the top grilled cheese experts so when one of her recipes are posted online, it is time to take notice. This recipe is courtesy of Ms. Werlin’s newest book, Grilled Cheese Please!, a must have for any grilled cheese lover. I have not experimented much with cranberry sauce, or cranberries in general, but when combined with blue cheese and dijon mustard, among other ingredients, it sounds great.

The debate will rage on as to if the quesadilla is a grilled cheese. However, that is irrelevant when you have such a great recipe as this one. On menus across the country, veggie quesadillas are very boring, either including just cheese and tomatoes or cheese and your standard veggie fare. This recipe turns all those boring quesadillas on their heads. Why not turn a boring old quesadilla into a gourmet dish, such as this one? Seems like it would have a good pay off…

Mr. Kaplan says the Melt is a “high-end restaurant in a fast-casual shell,” because of the gourmet quality of its ingredients, and its use of technology to ensure an optimal level of bread crispness in the melt and aerated frothiness in the soup. He says he doesn’t want the Melt to emulate other restaurants “who have turned the grilled-cheese sandwich into the club sandwich” by stuffing it with other fillings. (ed note: emphasis is mine)

Currently, The Melt offers a grilled cheese and soup combo for $8.75, not necessarily expensive but not necessarily inexpensive. One must realize that all melt sandwiches only contain bread and cheese (fancy bread and cheese, yes) but no other fillings. As evidenced by the above quote, fillings will never enter The Melt walls, let alone sandwiches.

As is pretty obvious, I am all for grilled cheese restaurants, however, I am not sure why Mr. Kaplan is so opposed to adding fillings to his grilled cheese sandwiches. Melt Bar and Grilled, The American Grilled Cheese Kitchen, Chedd’s and many more seem to do a great job creating grilled cheese sandwiches with fillings. In my opinion, it is not very difficult to match a funky cheese with a great bread. Many people in this country would have no problem doing just that in their own home on any given night. However, I am not sure that the general population would be able to create grilled cheese sandwiches, with fillings, that are yummy enough for any of the named grilled cheese restaurants. I have been practicing for three years and I still have plenty of misses, just imagine how the general public would fare…

When taking into account the whole atmosphere of The Melt, I must say that the soups they offer almost seem more gourmet than the grilled cheese sandwiches they are promoting and the price would make me think twice about visiting more than once.

One in ten Brits ‘scared’ of trying a new cheese

Almost half of all consumers say that traditional cheddar is their favourite variety while three in ten say that they only buy cheeses that they have tasted before.

The British Cheese Board, which carried out a survey into the nation’s cheese tastes, has urged consumers to broaden their minds and develop a more sophisticated palates.

Nigel White, the board’s secretary, said: “We know that the majority of people love their cheddar but we were surprised to find out that some people are actually scared of trying new cheeses. We strongly encourage people to be more adventurous with British cheese, and try something new alongside their usual cheddar.”

I definitely love my cheddar cheese but try my best to sample many different cheeses as much as possible. As it is with the survey’s creators, I am thoroughly surprised that so many British people are afraid of trying a new cheese and instead choose to stick to their favorites. On the other hand though, I wouldn’t be surprised if as many Americans (or more) were as skittish about trying new cheeses. At times we seem very daring but most other times, we are very stuck in our old ways.

Why Skipping Salt Is So Hard To Do

We all know too much sodium in our diet can be bad for our health. It can lead to high blood pressure, heart disease, strokes and more. The U.S. dietary guidelines made specific recommendations last year for African Americans to reduce their intake. But why is it so hard to cut back?

There are a number of reasons the habit is hard to shake, including the fact that fast food and processed food and restaurant food contain lots of the stuff.

But even when companies try to reduce the sodium in foods, they run the risk of changing the flavors we like (we hate when they do that), and, charging us more. So we don’t buy them. These are not great strategies for food companies to pursue in a recession, says Kantha Shelke, a chemist who runs the food science consulting company Corvus Blue in Chicago.

This is the evil that goes on: fishermen use a miles-long “longlines,” which have multiple branching lines and hooks attached. The lines indiscriminately catch whatever gets in their way, including sea turtles (it happens on Ramsay’s nightmare trip) and fish. Shark fin hunters don’t discriminate when it comes to species: it could be the endangered scalloped hammerhead or the also endangered thresher. Populations of both have declined 50 percent in the past 15 years. It could be a baby silky that hasn’t yet had a chance to bear offspring.

When they pull them onto the boat, they hack off their fins (tails included) while they’re still alive. Then they toss them back into the ocean, alive, to bleed to death.

This may (or may not) be a grilled cheese sandwich but with something that looks that good, I am not going to argue about what I should call it, I just want to devour it. Grapes are not something I typically include in my cooking, but it is definitely a great ingredient regardless of what you are making. Beyond the recipe, which was found in RealSimple, the photography of this tasty treat is phenomenal. If I could take one photo like the one above, I would be jumping up and down for days. All around, very well done.

This article is not about grilled cheese (or tomato soup, really) but about tomatoes in general and a great night out. However, this is not what caught my eye. The mini-grilled cheese sandwiches sitting on top of mini-cups of grilled cheese is exactly what did it for me. How awesome are they?! Sure, you were probably supposed to only eat one sandwich/cup of soup, but if I was at this event, I would have eaten about 5-10 of these little pieces of heaven. Delish!

Along the same lines as the above mini-grilled cheese with mini-cups of tomato soup, this recipe actually uses the grilled cheese sandwiches as croutons. Who said you have to eat the grilled cheese on the side of a cup of tomato soup and then dip it in? Why not save a step and simply toss the grilled cheese sandwiches into the soup?! Plus, these grilled cheese croutons aren’t simply plain/simple sandwiches. They are “kicked up” with basil, chives and thyme herbs and colby-jack cheese. Kathy even includes an awesome recipe for the base of this awesome meal, homemade tomato soup.

I love eggs. I love grilled cheese sandwiches. It only makes sense that I love eggs IN grilled cheese sandwiches. Minus the prosciutto (remember the Kosher thing?), this sandwich would be absolutely delicious. Well, it might even be better with the prosciutto, but I shall never know. Either way, yummy!

What intrigues me most about this vegan grilled cheese is that it does not use a cheese substitute, like Daiya (as I did previously), yet it combines various ingredients to create a cheese like product. Honestly, as I am not a vegan, I have not done my research on vegan grilled cheese sandwiches, but I am definitely intrigued by this method. Plus, it looks pretty good. Throw some salsa on the sandwich and I bet the grilled cheese will taste great.
