Blue Cheese Pasta Grilled Cheese

Blue Cheese Pasta Grilled Cheese

I have pushed the grilled cheese envelope before, with salmon, potato pancakes, quesadillas and bruschetta and am doing it again with pasta. My father recently purchased Ohio City Pasta and I have been trying to devise how to include said pasta within a grilled cheese. […]

Deconstructed Grilled Cheese

Deconstructed Grilled Cheese

I had two ideas for this week’s grilled cheese: Fettuccine Alfredo and deconstructed. Since the Alfredo grilled cheese did not sound healthy in the least (and I ended up making something similar down the road), I decided to go with deconstructed. (Also, my friend Jeremy […]

Laura Werlin’s Swiss Melt with Artichoke Hearts

Laura Werlin’s Swiss Melt with Artichoke Hearts

I had previously created a Laura Werlin original, Garlic Crusted Sourdough with Cheddar, and it was a huge success, becoming one of my more popular grilled cheese sandwiches. When I recently needed some quick inspiration, I decided to return to a known winner: Laura Werlin’s Great Grilled Cheese. I wanted to make sure that my father would enjoy the grilled cheese so I chose one with his favorite cheese, Swiss, and one of his favorite vegetables, artichoke. It was a great decision to make as both he and I enjoyed Laura Werlin’s Swiss Melt with Artichoke Hearts. (more…)

Greens & Mushrooms Panini (NY Times)

Greens & Mushrooms Panini (NY Times)

I stumble across a nice amount of grilled cheese recipes on the Internet but normally read them and then close the browser tab never looking back. This was not the case with NYtimes.com’s Greens and Mushroom Panini. The recipe calls for greens, such as kale, chard, turnip greens or mustard greens, none of which I have eaten let alone included within a grilled cheese sandwich. I was intrigued. (more…)

Asparagus & Lemon Pepper Vinaigrette Grilled Cheese

Asparagus & Lemon Pepper Vinaigrette Grilled Cheese

I suggested that we go with a macaroni grilled cheese for this past Sunday’s sandwich but I was shot down. (The sous chef was worried that the sous chef’s husband (aka my dad) would eat too many carbohydrates and it would affect his sugar. FYI: […]

Tortilla Chips Grilled Cheese

Tortilla Chips Grilled Cheese

With this tortilla chips grilled cheese, I learned how a pan can make such a difference in something as simple as cooking a grilled cheese. Previously, I had been using a griddle that I believed to look great in photos and cooked pretty well. It is a pan that has been in the family forever so I thought, why change? I had no complaints. Well, I should have known there were actually plenty of reasons to upgrade pans.

Awhile back, my great aunt bought us some sort of something from Williams-Sonoma that we would not use. We originally exchanged it for a panini press but soon realized we wouldn’t really use it as often as hoped. (I am the only sandwich-aholic in the family.) That press was then exchanged for a pair of pans, one of which was a grill pan. This pan was used for this grilled cheese and hopefully the awesomeness can be seen in the photos. The pan browned/crusted the bread perfectly and allowed for a nice crunchy on the outside soft on the inside grilled cheese sandwich. This pan will be used for all future Sunday Dinners. (more…)

Sweetened Grapes & Brie Grilled Cheese

Since I knew I would be using the Brie for this particular grilled cheese, I decided to go sweet. Via GroupRecipes.com, I found a Brie and Grape grilled cheese recipe that was perfect. Ideas started popping out of my head including a grape and strawberry […]
