I have tried so many cheeses while writing this blog and have so many more to try, yet, I know that Cheddar is and always will be one of my favorite cheeses. The sharpness of a good cheddar, in my opinion, is simply unmatched by any other cheese. I will continue to search for the best cheddar out there, as I hunt for the best grilled cheese sandwich. Combine the two and you have yourself a delicious creation. This Apple Cheddar Grilled Cheese is well on its way.
Squash, Manchego and Balsamic-Onion Grilled Cheese

Manchego cheese seems to be a very popular cheese that everyone seems to love. The only problem is, I have mixed feelings. Granted, I do want to give it another chance, but after two tastes, I was simply unsure. That being said, this sandwich still looks amazing. With fall coming on big in the last couple days (at least in up here in Ohio), squash is a great addition to any grilled cheese sandwich, especially one with balsamic onions. Mmmm.

Figs. I know absolutely nothing about figs. I don’t know what they taste like (I don’t think) and I sure as hell don’t know how to cook with them. For that reason, and the fact that it includes smoked gouda, I was intrigued by this particular grilled cheese sandwich. Looks delicious while including a unique ingredient.
