Somehow, this past week, I got on the subject of potatoes/potato pancakes and immediately my mind went to grilled cheese sandwiches. Potato pancakes in a sandwich? Good. Potato pancakes as the bread of a grilled cheese sandwich? Perfect. (Thanks sous chef.) Instead of making our own, as they need to be thick, we purchased the potato pancakes from a local (Jewish) restaurant/deli, Corky & Lenny’s. They are pricey @ $2/each, but boy are they yummy, regardless of the grease on your hands. I thought, for this sandwich, they worked perfectly and it was nice to create a grilled cheese sandwich without bread, yet still have a top and bottom.
